Position Purpose

Acting on own initiative, the Director Food & Beverage oversees and coordinates the growth of Restaurant and Events businesses by implementing strategic plans and creating objectives for long term, sustainable growth. This position manages a team and is responsible for improving performance and processes. The position is also responsible for creating cohesive direct to consumer (DTC) programs by focusing on brands, marketing, and customer experience.

Functional Responsibility

  • Oversees, directs, and manages departmental activities and team performance
  • Drives and models company culture and holds self, peers, and direct reports accountable for demonstrating a constructive company culture through influential, personal behavior and actions
  • Develops and implements clearly defined operational and individual goals to develop employees, achieve productivity levels, and to attain the company's strategic plan
  • Researches best practices, stays abreast of industry trends, and maintains awareness of regulatory changes to ensure compliance and continually improve operations
  • Executes departmental financial objectives by preparing budgets, scheduling expenditures, analyzing variances, and initiating corrective action
  • Achieves departmental results to ensure the effective delivery of the strategic plan
  • Develops staffing needs; attracts, motivates, and retains a workforce with the appropriate knowledge, skills, and abilities to achieve goals and objectives
  • Promotes and ensures a safe and healthy work environment for all employees
  • Leads the way and prepares departmental staff for success in a continually changing environment
  • Fosters a work environment that encourages creative thinking, promotes flexibility, and drives innovation
  • Addresses employee issues, concerns, and complaints in an objective and confidential manner; notifies HR Business Partner and keeps immediate manager informed as appropriate
  • Ensures compliance and consistent application of company policies, initiatives, and decisions
  • Coaches, guides, and develops direct reports; fully engages in the GPS (Performance Management) process; provides high-quality feedback, and ensures proper GPS documentation of employee performance, recognition, and deficiencies

Essential Duties

  • Partners with the Executive Chef and Food and Beverage Manager to develop pricing and promotional strategies on food and beverage menus and experiences
  • Partners with Events and Trade Manager to develop pricing and promotional strategies to drive corporate, private, and internal company business
  • Assigns and delegates responsibility and authority for the operation of the various food and beverage departments
  • Collects, verifies, and prepares monthly financial data; addresses discrepancies and analyzes financials to help in decision making to meet departmental strategic plans
  • Provides financial information to departmental leadership and other hospitality and DTC business partners monthly or as needed; researches and resolves any discrepancies that may occur
  • Works with the other Hospitality and DTC Directors and managers on strategics plans and goals to maintain a steady and consistent growth of club membership and facilitate effective retention actions to maximize the value of each member
  • Establishes controls to ensure that all safety, sanitation, preventive maintenance, and other company standards are consistently maintained
  • Assures that all standard operating procedures for revenue and cost control are in place and consistently utilized
  • Helps plan marketing and sales promotion activities for the food and beverage department 
  • Helps develop wine list and bottle/glass wine sales promotion programs
  • Partners with the Executive Chef to supervise the remodeling, refurbishment, and other building design enhancements applicable to food and beverage service
  • Partners with Vice President DTC to develop long term strategic plan that promote the development and growth of the F&B and Events business
  • Partners with other divisional and department heads on projects and initiatives that include a Food & Beverage component
  • Supports front and back of the house staff by working on the floor as needed

Minimum Requirements

Education and Experience

  • BA degree with emphasis in Business Administration, Marketing, related field, or equivalent experience required 
  • 7+ years’ experience working in the industry, in similar capacity
  • 3+ years leadership or supervisory experience

 

Knowledge, Skills, and Abilities

  • Must have an acceptable driving history and possess the ability to travel as needed
  • Exceptional restaurant operational and marketing knowledge and experience with Contemporary Casual Restaurant and/or Resort F&B oversight and management
  • Must be able to use rigorous logic and methods to solve difficult problems with effective solutions; can see hidden problems and looks beyond the obvious
  • Ability to plan difficult tasks and projects by setting goals and objectives
  • Excellent verbal/written communications, presentation, customer service, organizational and merchandizing skills 
  • Comprehensive understanding of digital and analog retail sales, social media/networking, and wine marketing
  • Strong PC (Microsoft Office, Teams) and familiarity with POS, customer database and AI marketing platforms
  • Ability to make good decision in a timely manner based upon a mixture of analysis, experience, and judgement

 

Certificates and Licenses

  • Valid California Driver’s License
  • Responsible Beverage Certification – must obtain within 60 days of hire
  • Food Handlers Certificate – must obtain within 30 days of hire

Working Conditions

  • General office environment with occasional travel
  • Required to drive automotive vehicle or equipment
  •  Occasionally may be required to lift and carry cases of wine

California Pay Transparency Disclaimer: This is a Exempt position. The pay range for this position is $126,530.00 to $197,915.00. It is not typical for an individual to be hired at or near the top of the range for their role. Actual placement within range will be contingent upon a number of factors, including but not limited to the candidate's qualifications, education, experience, internal equity and alignment with market data.
